Ingredients & Substitutions

Any cut of steak will work. Both ribeyes and sirloins are great options since they are tender and flavorful to begin with. I recommend using steak that is about 1 inch thick and boneless. Add more time for bone in.

The homemade steak seasoning adds the perfect amount of flavor. The seasonings are flavorful enough to complement the steaks without being overwhelming. Feel free to add, subtract and adjust seasonings to suit your taste. Or, substitute with 2 tablespoons Montreal steak seasoning if desired.

Olive oil creates a great sear on the steaks. Substitute with butter, avocado oil, or vegetable oil if needed.

What is Steak?

Steak is meat that is typically cut across the muscle fibers of cattle. Steak can be boneless or bone in. There are many different ways to cook steak.

Steak can be grilled, broiled, pan fried, pressure cooked, air fried, and deep fried. In addition to being from cattle, steak can also come from goat, bison, turkey, and deer.

There are many different dishes that include steak. It is a very common cut of meat.

Different Cuts of Steak

Filet mignon is cut from beef tenderloin. It is incredibly tender and flavorful. This cut of meat is expensive due to its extremely tender texture.

Ribeye steak is heavily marbled and extra juicy. It comes from the ribs and can be boneless or bone in.

Strip steak is another common cut of beef. It is cut from the short loin.

Sirloin steaks are cut from the sirloin, which is near the back of the animal. These boneless steaks are more affordable than other cuts.

Skirt steak is long and thin. It is cute from the belly. Skirt steak can be incredibly flavorful despite its abundance of connective tissue.

Flank steak is very similar to skirt steak. It is slightly more wide and thick than skirt steak.

There are many other cuts of steaks, but these are the ones I recommend for cooking in the Instant Pot.

Taste & Texture

This Instant Pot steak has a strong beef flavor. It tastes like a classic steak! The seasonings add the perfect touch of flavor while allowing the beef flavor to shine.

This steak is thick, juicy and flavorful. It is not dry or bland.

How to Make

Step 1

First, combine all seasonings in a small bowl.

Step 2

Pat steaks dry with paper towels. Then, rub seasonings all over both sides.

Step 3

Press sauté on Instant Pot. Add olive oil to the pot.

Step 4

Once the oil is hot, add steaks to the pot. Sear for 1 to 2 minutes on each side.

Step 5

Then, press cancel and carefully remove steaks from pot.

Step 6

Pour 1 cup water into pot and use wooden spoon to scrape any bits stuck on the bottom of the pot.

Step 7

Place trivet in Instant Pot. Place steaks on trivet.

Step 8

Secure lid. Set valve to sealing. Pressure cook on high for 3 minutes (medium rare) up to 12 minutes (well done).

Step 9

Once timer goes off, carefully move valve to venting and manually release all pressure. Remove steaks from pot and serve!

Expert Tips & Tricks

For best results, use fresh, high quality steak.

Sear steaks on both sides to create a heartier flavor and better texture.

After pouring water into pot, use a wooden spoon to deglaze the pot. This helps prevent burning of any leftover steak bits on the bottom of the pot.

Use oven mitts when handling the top valve and the inner pot. They can get very hot!

After steak has cooked, allow it to sit for 5 minutes before slicing and serving. This allows the steak to remain juicy.

Temperature & Doneness of Steak

Use a meat thermometer to test doneness of your Instant Pot steak.

Rare steak has an internal temperature of 130 to 135 degrees Fahrenheit.

Medium rare steak has an internal temperature of 140 degrees Fahrenheit.

Medium steak has an internal temperature of 155 to 160 degrees Fahrenheit.

Well done steak has an internal temperature of 165 to 170 degrees Fahrenheit.

How to Serve & Store

After removing steak from pot, allow it to sit for 5 minutes. This secures in the juices and yields an extra juicy steak.

Serve with desired sauce and sides. These photos show Green Beans and Potatoes. In addition, French fries, roasted cauliflower and asparagus, and mashed potatoes are great side dishes.

Store leftovers in the fridge for up to 4 days.

This Instant Pot Steak is tender, juicy and so flavorful! This pressure cooker steak is easy to make and yields the most delicious steak. This Instant Pot sirloin steak is so hearty and savory.

  • 2 steaks
  • ½ tsp ground pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ¼ tsp sea salt
  • ¼ tsp onion powder
  • 2 tbsp olive oil
  • 1 cup water
  • First, combine all seasonings in a small bowl.

  • Pat steaks dry with paper towels. Rub seasonings all over both sides of steaks.

  • Press sauté on Instant Pot. Add olive oil to pot.

  • Once oil is hot, place steaks in pot. Sear for 1 to 2 minutes on each side.

  • Press cancel. Use tongs to remove steak from pot onto plate.

  • Pour 1 cup water down into pot and scrape bottom of pot with wooden spoon to deglaze it.

  • Place trivet inside pot. Place steaks on top of trivet.

  • Secure lid and turn vent to sealing. Pressure cook on high for 3 minutes for medium rare, up to 12 minutes for well done.

  • When timer goes off, carefully turn valve to venting and manually release pressure.

  • Finally, carefully remove steaks from pot. Allow steaks to rest for 5 minutes before slicing into to lock in those juices.

  • Any cut of meat will work, but I have had success with both ribeyes and sirloins.
  • Feel free to replace seasonings with Montreal seasoning or your favorite seasoning mix.
  • After steak has seared on both sides, add water and scrape bottom of pot with wooden spoon to deglaze pot.  This helps to prevent burning.
  • Pressure cook steaks for 3 minutes for medium rare, up to 12 minutes for well done.
  • Allow steak to rest for 5 minutes after cooking.  This helps keep the steak juicy.
  • Store leftovers in the fridge for up to 4 days.
  • My pressure cooker only took 5 minutes to come to pressure.
